It is then cut into smaller bitesize pieces with mostly fat to each bite then spiced with Lil Leigh’s Portuguese chilli spice and marinated for upto 48hrs. It is then layed in an industrial air drying cabinet and dries at approximately 25 degrees celcius until dried to perfection.
